Edith Cowan University recently formed a new strategic Institute for Nutrition Research at Edith Cowan University. The Institute is currently working on the practical application of 3D food printers to improve the food experience of people in residential aged care on textured modified diets. Care Food Co is supporting the Institute in their development of 3D food printing technology compliant with the IDDSI framework to improve the eating experience for people living with dysphagia.

Dr Simon Little, Quality Food Systems Pty Ltd

Quality Food Systems is a consultancy to the Australian and international food manufacturing industry that specialises in developing and implementing food safety management systems to all standards. They are associated with the Sydney Institute, University of Sydney and the University of Technology Sydney. They also advise the Australian government on food safety.

Amanda Orchard, Texture Modified Food Solutions

Amanda Orchard is Chef Coordinator at The Maggie Beer Foundation (TBF), Chef & Assistant Researcher at Edith Cowan University’s Future Foods & Digital Gastronomy Laboratory. She has a long career in the Aged Care and Health Sectors, including HealthShare NSW, In2Food Australia, Robot Coupe Australia, Mercy Health, Japara Aged Care & Embracia Aged Care Victoria. As Chef Manager at an aged care home, Amanda identified an opportunity to provide Dysphagia patients with flavoursome texture-modified foods and developed systems to ensure great taste, flavour, aroma, and appearance. Due to the positive responses from residents, families, staff, and industry professionals, Amanda founded Texture Modified Food Solutions (TMFS). Care Food Co is working with Amanda to improve IDDSI understanding across the industry and develop solutions using 3D printing to improve the customer experience of  texture modified food.

Safe Swallowing Education

Safe Swallowing Education provides Accredited Safe Swallowing Education and Management for Aged Care Staff & Carers.

Our Safe Swallowing Education Course supports residential aged care staff and those caring for our ageing population to better understand and manage swallowing difficulties and to easily implement the new food and fluid modifications set out by the International Dysphagia Diet Standardisation Initiative (IDDSI). The Course provides information on how we swallow, understanding a swallowing problem (dysphagia) and safe strategies to support residents and carers at mealtimes.
