High Pressure Food Preservation (HPP) is a cold pasteurization (pascalization) process in which products, already sealed in their final packaging, are introduced into a tank and subjected to high isostatic pressure (300 - 600 MPa) transmitted by water. Pressure over 400 MPa at a temperature of + 4`C to 10`C inactivates plant flora (bacteria, viruses, yeasts, molds and parasites) present in food. This significantly extends the shelf life of the products (TPS) and guarantees greater food safety. Processing under high pressure preserves the sensual and nutritional qualities of the food due to the lack of heat treatment. It also maintains its original freshness throughout the shelf life.
